La Gar-Nat is made using the ancestral method, meaning the wine is bottled before fermentation finishes, and it is this fermentation in the bottle that creates the bubbles, without adding sugar or yeast. Unlike the traditional (champenoise) method, there is no tirage or dosage. This style is known as Pet-Nat (Pétillant Naturel), natural sparkling wines made without any additives or enological products, not even sulfur dioxide.
